Yum.
Good to freeze too.

Leftover mashed potatoes sautéed in butter.

(60,006 posts)boil up the carcass to make a nice stock
saute celery, onions, peppers, add stock and a can of tomatoes, spice with salt, pepper, chile powder, cumin and cayenne, add turkey rescued from the boiled bones and leftover turkey meat (as much as you want), add a cup of rice, some frozen peas and corn, simmer until the rice is done.....serve with crumbled taco chips and sharp cheddar melting on the top.

(2,146 posts)Mom's and grandma's stuffing is dense, moist, sliceable, you could use it instead of bread to make leftover turkey sandwiches. Would work fine
Mrs Surfer's recipe is dry and crispy cubes of bread, great a soaking up gravy I admit but as a leftover...maybe as salad croutons? Just not appealing cold, for me

(4,509 posts)I cook a big-ass bird every year. I hate it. Turkey has always tasted like spoiled chicken to me. I will give hubby a day or two to get sick of it and then freeze the leftovers in small portions that when thawed will be mixed with grains and vegetables for the dogs.

(63,221 posts)Saute a little onion or scallion in some butter in a skillet, then toss in your leftover mashed potatoes and cook until lightly browned, blending in the onion/scallion until well distributed. Delicious! Almost better than the first time around.
