So I sautéed the chicken breast in my cast iron skillet with rotisserie seasoning.
Made a big salad - Romaine lettuce, spinach, arugula, cucumber, tomatoes, hard boiled eggs, and red onion. Cut the chicken into slices and served it on top of the salad. Also baked some Rhodes crusty rolls. Decaf iced tea.

(118,501 posts)from some summer camp, I think through the gardener she had when she was older, come and pick tomatoes to take them home. They were it separate pots on a walkway so they didn't need any pesticide. Those mega tomatoes.

(6,110 posts)Whole grain Spaghetti with meat sauce made from tomato sauce, ground beef, sauteed onions, spinach, Zucchini, spiced with garlic powder, Italian dressing flakes, salt, basil flakes. We also had garlic bread for side and a slice of cheese cake.

(60,008 posts)Our last four quarts of home canned tomatoes were all Cherokee Green - a tomato that is heavenly to eat, but the flesh stays green when it ripens. So it is a bit of a mind bender to look at and taste (but fun!). So easy, so quick, so delicious.
Our go-to Cod recipe - also so easy - dip the filets in milk, then roll in bread crumbs, drizzle with some melted butter. Bake at 525 (!!) for 15 minutes - high heat seals the surface, and you end up with nice, sweet tender flakes.

(55,004 posts)put a paper towel on a plate (or use a paper plate) lay three corn tortillas out evenly and put a pile of shredded cheese on each (plus a sprinkle of salt). nuke for one minute* and then add chopped sweet onion and fresh tomatoes (another little sprinkle of salt) and top with salsa (el pato for me).
fast, easy, and not too unhealthy.
*the tortillas I use are kind of moist, so I usually lift them off the plate with the paper towel and wipe the condensation off then return just the tacos to the plate, otherwise they get kind of mushy

(15,805 posts)Not really hungry so I just cut up a baguette and make little garlic toasts. Sliced up some odds and ends of cheeses... Harvati, a nutty baby swiss, gouda and a bit of blue cheese. Added a half stick of aged pepperoni, some stuffed green olives, a handful of cherry tomatoes and red onions.
We like mustards so I included a variety of tastes and opened a nice cab to complete our "tapas" style meal. We sat around the coffee table and nibbled our way through a movie.
