How do people cooking sushi keep everything to neat? When I cook I spill shit everywhere.

Line it with seaweed, tamp down some sticky rice, lay in the filling, cover with more rice, seal it in with the seaweed, put the cover on the box to settle everything down, uncover, turn the log out, voila...no mess sushi!
