but she didn't measure up to their expectations of fierceness. I'm also surprised that they didn't just kill her.

Fighting ANY animal is plain SICK, but dogs especially.
Poor girl. So glad she was found & saved.

I had a 'wrinkle-less' Shar-Pei some years ago who was almost exactly like Gracie.
She was a gift - literally and figuratively - from good people who just had no room or time for her (but she had been very well treated - unlike poor Gracie).
They're a blessing, and you never forget them.
