Edit to say: Yes, use some of the spices mentioned! They make it more better. 😄

This pomodoro tastes as good a year after it is frozen and thawed as the day I make it.
20lbs tomatoes
2 regular sized heads of garlic
1 C olive oil
36 large basil leaves
salt
Peel/dice tomatoes into 3/4 inch chunks (I leave the seeds in)
Drain and keep any liquid that comes off during dicing
Put the tomatoes in a large pot
coarsely chop the garlic and add to the pot
Bring the tomatoes to a temp of 160F on med-high heat (not trying to cook it, just a quick sterilization and release some liquid)
Take out the tomatoes from the pot, leaving the liquid behind
Add the liquid accumuated from the dicing process to the pot.
Add 1 tsp salt, and boil on high heat and reduce to about 1/3 of initial volume
Cool the reduced mixture to room temp (put the pot in front of a fan, works faster than you think)
Add tomatoes back to pot
Julienne the basil leaves, add to pot and gently mix
Add 1/2 extra virgin olive oil to the pot and gently mix.
Freeze in freezer bags.

Seriously, I feel your pain! I've got even more puree in the freezer and my neighbors are now refusing to answer the door if they see me on their sidewalk.
I've got other friends that welcome them (no gardens - apartment dwellers, etc) but other than that - just more quality to add to the compost bin for another good crop next year!

Second, eating three tomatos a day is easy, and gets rid of them in less than two weeks.

Put a sign out front free tomatoes.
People will love you for that.

(86,330 posts)Garlic soup, great for extra tomatoes from the garden.
6 or seven medium sized tomatoes cut into wedges
1 bulb of garlic, peeled and cloves ruptured.
2Tbps olive oil
1 Bay leaf
Water
Makes about a gallon.
In a large stock pan, 1.5 gallons maybe, lightly brown the garlic in the olive oil, add tomatoes and Bay leaf. Add enough fresh water to cover the tomatoes, bring to a boil then lower heat to simmer stirring occasionally. Simmer until the fluid level has dropped about an inch, replace the water and cook down again. When ready remove from heat, let rest about an hour then strain out pulp and discard* that part. The fluid is nearly clear and tastes like tomato rather than garlic. The only thing that can improve on this soup is to do egg drop at a full boil. This soup seems to be a loner as I have yet to find something else to mix it with. And the pulp*, I have yet to find anything one can do with it. If anyone figures out a use I'd love to hear it.
This soup can be frozen in individual portions and is great with a good sandwich on a brutal winter day or as an early course to a really nice meal, serve with a bread like a baguette or sour dough.
