Alas, that was decades ago.

In regular, not any of the fast food restaurants in the OP, the quality of fries varies enormously. Far too many restaurants use frozen fries, which are at best okay. Here in Santa Fe, I don't think any restaurant makes fries from fresh potatoes. In Portland, OR, which I have visited several times, every place uses real, fresh potatoes. Heck, I could go to Portland just for the fries.

This is why I have been known to make fries from scratch at home. It's somewhat time consuming, but incredibly good, if for no other reason than they are made from real, whole potatoes.

the undercooked golden look of the King, Wendy's and the like.

That said, I don't remember the taste much, but I really like the idea of curly fries.

And what do Checkers and 5 Guys do to get them so brown and delicious looking?

they are still inconsistent as hell, but when you get a good batch they are damn good. otherwise McDs are still pretty good. now let's talk onion rings! Jack in the Box
