I soaked some dry beans over night and rinsed them off....

I left them out for two days, are they still good because I wanted to make some bean soup. I wasn't feeling all that great on saturday or today so that is why I didn't cook them up right away.

Especially in the heat. If they'd been refrigerated, it would be a different story.

If you rinsed and recovered them each day they're probably fine, they'll just cook a little faster. If you left them in the same water for two days, I don't know that I would cook them. But then I don't know what your climate is, what kind of beans they are, or where they came from...I'd say do a little internet research and use your instincts.

I make a pound at a time (dry wt) and use them over several days for several purposes,
but I keep them refrigerated.

I don't have the patience for the overnight soaks. I cover them with 3 times their "height"
in water, bring it to a boil for two minutes, turn off the heat and let them sit covered for
2 hours. I rinse them several times. Then I cover them in about 4 times their height in
water, bring the water to a boil for two minutes and simmer the covered for another two
hours. I rinse them several times again and voila.

Gas-free soak. In a stockpot, place 1 pound of beans in 10 or more cups of boiling water. Boil for 2 to 3 minutes. Then cover and set aside overnight. The next day 75 to 90 percent of the indigestible sugars that cause gas will have dissolved into the soaking water.

This "chow" site with replies by some cooks seem to think they'll be fine IF you change the water and cook them right away. They ferment when left out that long in water, which some people like but some don't. But it's not dangerous BUT you have to change the water.

they will be fine, don't add any salt until they are completely cooked. no need to soak beans anyway, I have never done it in my life and trust me I eat a HELL of a lot of beans. if they got dry again and didn't actually sprout they are fine.
