(1 post)By baking a homemade fruitcake - and by being grateful a certain fruitcake wasn't elected President of the United States in 2012. I also would like to offer my own recipe for homemade fruitcake, with a promise that the difference between a fresh homemade fruitcake and one of those hideous store-bought doorstops is astounding. Fruitcake is also one of the easiest baked dishes you can make (even Alton Brown says that only home-baked brownies are easier). It's well worth the effort to make one...and if your family and friends are the kind who might run away just because "it's fruitcake" -- then tell a little white lie and say it's a SPICE CAKE.

the pecan apricot from Eilenberger's sounds almost edible!
but $25 for 1.5 lbs? ouch

(29,414 posts)Unless you know how and have the equipment to make them, it's worth that price for the quality they offer. I've had their Australian Apricot cake and would buy it again, versus making my own

(4,833 posts)of a Collin Street Bakery large fruitcake that a relative sends me every year around the middle of December. I like fruitcake, but that's a lot of fruitcake.
So this morning I started having a wedge with coffee in lieu of breakfast. If I keep that up it should be gone in another week or two. Particularly if I can induce anyone else to have a piece or two in the meantime.
Note to self: contact Auntie and get her to throttle back to a medium sized one in future years.

I said, "Oh, I hate candied fruit, they're all like maraschino cherries!" then I added, "But Collin Street Fruitcakes are actually really good! My aunt and uncle used to send one to my family at Christmastime." Then my husband said, "Oh, someone just mentioned Collin Street Bakery in that thread!"
So I looked up Collin Street's website to discover why I liked their fruitcake and found out that they use dried pineapple, papaya, cherries, raisins, and pecans for the fruit and nuts in the cake, and just put a few green and red colored glacéed fruit pieces on top just to make the cakes look festive.

(2,682 posts)I'm the only one in the family who likes fruitcake so I expect to enjoy a bit of it every day for the next month. It's full of candied fruit and very little cake and the top is heavily layered in pecans. It's yummy!
