Got the recipe right off the package of Bob's Red Mill TVP with a few slight alterations like using a couple packages of chili seasoning mix and a can of mild chiles.

(37,990 posts)But all efforts have been unsatisfying. Someday, I'll try making seitan. My grocery store doesn't carry wheat gluten so I'll have to try making it with almond flour.
Just the same, the TVP chili was really, really good.

(32,078 posts)Black beans and chickpeas work really well. There are tons of recipes on the Internet. I would avoid using wheat gluten, anyway. A lot of it comes from China, and it was the culprit in all those pet food deaths of a few years ago.

(37,990 posts)But as for veggie burgers, my disappointment comes in the consistency. I've tried numerous recipe versions and none of them glom together the way a beef burger does. My dream is to make something that simulates a Boca Burger.
I'm beginning to wonder if the trick isn't so much the ingredients as the preparation. I think I might need to puree my "meatstuff" and then add the chopped veggies, seasonings and stuff.
I still want to make seitan but I'm finding it hard to locate recipes that result in the meat-like texture without wheat gluten.

(51,443 posts)2 tablespoons canola oil 1 medium onion, chopped 1 medium red bell pepper, chopped 4garlic cloves, minced 1 cup dry lentils (red or brown) 1/2 cup quick cooking bulgur, whole wheat couscous or quick-cooking (pearled) barley 2(14 1/2-ounce) can fat-free, reduced sodium vegetable broth 1 1/2 cups water 1 -- (14 1/2-ounce) can petite diced tomatoes 2 tablespoons chili powder 2 teaspoons ground cumin 1 teaspoon salt -- Freshly ground black pepper -- Yogurt, chopped red onion, hot sauce (optional)
Instructions
1.Heat oil in a large saucepan. Add onion, bell pepper and garlic; cook 7 minutes. Add remaining ingredients except toppings. Simmer 30 minutes. Serve with yogurt, red onion and hot sauce.
