Going to feed my parents veggie

hors d'oevres tomorrow night. Endive with feta and antipasta. Cuke with cambenzola. Does anyone have a suggestion for any other veggie based finger food? Not veggies and dip, mom has that in the afternoons.

Stuffed with cheese and breaded then baked. Deviled eggs, technically not veggie. I personally love stuffed olives. Stuffed and baked mushroom caps.

I put a little salt on the cheese and you can drizzle with olive oil and/or balsamic if you please.

Here's how I make mine. I usually make extra so I can give it to my mom, but you can adjust the recipe accordingly. Quick and easy.

16 slices french bread.

4-5 TBSP olive oil

3 tomatoes

1/2 green pepper

1/2 medium sized onion

2 tsp oregano

2 tsp Italian seasoning

2 tsp basil

16 slices mozzarella

Preheat the oven to 350.

Brush the olive oil on the bread and place on a lined baking sheet. Put it in the oven to toast while you combine the other ingredients (except the cheese)

After you're finished combining the remaining ingredients (except the cheese) remove the bread from the oven and put about 2 TBSP of the combined ingredients on each slice of bread.

Place a slice of mozzarella on top of the combined ingredients you just put on the bread.

Put the baking sheet back in the oven and watch until the mozzarella is melted over the combined ingredients.

Remove from oven and enjoy!

This also goes well with spaghetti or lasagna as an appetizer.
