BLACK BEAN BROWNIES! Good...and good FOR ya'!

Take a can of black beans and pour them in a colander or sieve.
Rinse thoroughly under running water.
Rinse the can. Get all the slurpy bean juice out.
Put the beans back in the can and fill the rest of the way up with water.

Dump that into a food processor or blender.
Puree.
It'll be soupy.

Mix that with a package of brownie mix.
I added some roasted walnut pieces.
Pecans would be good too.
Maybe peanuts?

Pour into an appropriate sized buttered pan.
I used a 9 or 10 inch round cake pan.

Bake according to package instructions.
I used 350 for about 40 minutes.

The brownies are rich and moist and YOU CAN'T TASTE THE BLACK BEANS!
So...you get a yummy chocolate treat with NO eggs or oil, and you get FIBER and PROTEIN!

I'm giving away a huge secret here but I don't care...the secret ingredients in my black beans are a 1/2 tsp of unsweetened cocoa powder and 1/4 tsp of cinnamon along with the minced onion and garlic, very little salt, a splash of hot sauce and a bay leaf.

I learned about the cocoa and cinnamon from a chef friend from El Salvador as it allows one to thicken beans in minutes rather than hours of simmering; what started as a cheat became culinary magic. Everybody says they're better than their beans with a richer deeper flavor but can't put their finger on what it is...I have said if someone guesses, I'd tell them but nobody has ever gotten it right.

So, there it is...the secret bean ingredient that makes the beans better when you go out than you can make at home, is cocoa.
