and how long to cook it. They didn't suggest anything really interesting to add to the casserole. Just bread. I'm not good with kitchen creativity. What spices or veggies would go good?

are salty enough for tomorrow. But butter, yes. I'm going to coat both the lobster and the mushrooms in a little butter. Thanks.

the peas in the casserole for 25 to 30 minutes? I don't want them overcooked.

And, against my own taste palate, something red like pimentos, pickled and chopped.

And/or some capers: I love the savory/salty profile.

Like I said, I like the salty, would like to see on or two capers in every bite.

Also, use a little of the brine if you need fluid for the mixture.

bits or kale (it will soften nicely in the sauce), or, torn spinach.

no garlic - it will overpower the delicate flavors. enjoy

10. Maine Lobster Casserole Recipe.

3 Chicken lobsters, boiled
2 tbs butter
2 tbs all-around flour
1 c. top milk or thin cream
1/2 c. milk
1/2 tsp dry mustard
5 slices of bread
Salt and paprika for taste

Melt butter in top of double boiler. Add flour, mustard, salt and paprika. After making a paste of these, slowly add thin cream or top milk and whole milk. Stir constantly to make smooth and continue to stir and cook until thickened. Add the lobster meat which has been cut into serving pieces. To the creamed lobster add the bread, crusts removed,which has been broken into pieces not too small. Mix well and pour into a casserole.

Top mixture with buttered coarse bread crumbs or crushed cereal flakes. Bake in a 350 degree oven only long enough to reheat mixture and lightly toast topping. Makes 4 generous servings.

want to eat it again tomorrow. Very nice. I added a tiny bit of mustard to the white sauce and kept the butter/mushroom/lobster water left over from the fry and mixed it into the white sauce. I did not add wine (I forgot). The Cappers didn't add anything.... the sauce was tasty enough on its own without that zip. I will make it again.

all get together in our family, each doing what they do best, and it is working out. Well enough that we are keeping mom at home long after most people would be in a nursing home. We are having the ceiling lifts installed in the month to come. They are very lucky they can afford all the help they can. The health care aides are magnificent.
