Lemon, Coffee (or Mocha), Vanilla, Strawberry or Raspberry, Pistachio, and Chocolate. Or at least that's what the flavors they would be at any one of the four Farmer's Market patissiare (sp) stands on Saturday around here would be. Usually $1.00 a cookie, but well worth it.

The cookie part is supposed to have almost a meringue texture (crispy on the outside, melt-away on the inside) and the filling is either jam or a favored custard.
