food rave of the day (3/20): pudding

I have to admit, I don't have it very often because the combination of the lactose and the sugar sometimes doesn't sit very well w/ me, but I love the stuff.

What's your favorite?

I've made sugar free instant pudding with all types of milk alternatives: almond, rice, coconut, etc. The trick is to use half as much liquid, and it sets up just fine.

but I'll happily eat all of the above including the aforementioned savory, blood and Yorkshires.


But I prefer they be cooked. The skin is my favorite part. Instant (or pre-made cups) is only for when there's nobody around to cook it for me.

at Grandmas house after swimming. But, my mother had a real sweet tooth- she sprinkled sugar on the skin. That's a treat they LOVED!! Course, my mother served us a wedge if iceberg lettuce sprinkled with sugar when we were kids.

My Grandma always gave me slices of tomato with a pile of sugar on top - so thick you couldn't see the top of the slice but you could see the tomato juice seeping up the mountain.

And for breakfast she'd give me a bowl full of banana slices with nothing but milk and sugar added...

Hmmmmm, I wonder if Grandma owned stock in Big Sugar....

I don't know how much of it is because I really like it, or because it's what my mom always used to make for us when my sibs or I had some sort of gastrointestinal issues. It's easy on the gut, and it's kind of comforting to eat.

made with coconut milk.

Also love, love, love rice pudding with loads of cinnamon.

Also love coconut custard made with rice.

Also butterscotch. And chocolate.

But I'm lactose intolerant, so I make them with soy or other non-cow milk.
