food rave of the day (3/21): sausages

I made some homemade, baked-in-the-oven mac & cheese the other night and added both ham and sweet Italian sausages. It was delicious!

What kind do you like best?

It is known simply as "Portuguese sausage".

I made a baked one a few weeks ago with some kielbasa in it. It was a big hit at the house. Melted grated cheddar and parmesan into a bechamel and seared thick chunks of kiealbasa and threw it all in a casserole dish with corckscrew pasta and baked it for a bit until the cracker crumbs on top were brown and it was bubbling up all lava-like and delicious. (I use Ritz/Townhouse - whatever was on sale - but any cracker-ass cracker will do)

I love most all sausage - the only one I don't LOVE is plain old country breakfast sausage - the kind that comes in a tube and you slice off patties and fry them. I like it but I don't love it. I'd rather have scrapple though.

English breakfast sausage, on the other hand, is one of the greatest things ever.
