How do bison burgers taste in comparison to beef burgers?

I have to ask, because I checked out a new burger place yesterday. It was excellent.

I had the beef burger, but they advertise some other patty meats as well, including bison. I've heard of bison burgers but never had it before. For anyone who does, how does it compare to traditional beef patties?

and used it for hamburgers on the grill. I think it's much better than beef. It's sweeter and cleaner tasting, very moist. All I added was a little salt and pepper.

My husband wasn't impressed but mostly because he knew it cost quite a bit more than beef.

I had an elk burger in Denver though and that was quite a bit gamier than beef or buffalo/bison. Didn't care for the elk at all.

Bison is a cool novelty to try once but not worth the extra cost to me. Ruby Tuesday used to have them but not sure if they still do. I believe it's naturally leaner than beef so if that's a concern it might be more worth it to you. I saw a small package of bison in the fancy meat section at Publix last weekend but I didn't notice the price.

If you're ever up near Gainesville there's a place out in the Ocala Ntnl Forest that serves all kinds of wild game. I've never been but I plan to try it one of these days. I can't remember the name but when I go I'll just ask my boss. He loved it.

I know they serve gator and frog legs there...not sure about bison.

it just might be - I'll ask the boss tomorrow when I see him again.

Venison and quail and cooter too. I just looked up their website and I'm 99% sure that's the place my boss liked. There's also a place closer to Clermont that makes wild game sausage that he says is well worth bringing an ice chest and stocking up.

Obviously celebrates the works of Marjorie Kinnan Rawlings, who lived nearby.

I had my first (and I guess only) experience with frog legs there, and I was surprised how much they really taste like chicken. (Speaking of alternate meats and all.)

I reckon it's who fixes them. I had some fantastic ones at a cajun place in Dallas and had some that tasted like mud at some crap-hole here in Florida - I forget the name so I hope I don't accidentally go back.

But I damn sure remember Broussard's on Beltline drive in Irving. Frog legs and crawdads - soooooooooooo gooooooood but alas, that was 30+ years ago and I think they've closed since I was last there.

Little bit lower in fat and cholesterol that beef (unless it's very lean beef).

I do some work in South Dakota, and there are a couple places that have great bison burgers. They don't do much to them but light seasoning and cook em up. Unfortunately, they are always way too big. I don't need that much meat.

In fact, in Custer State Park, you can see the bison roaming around the park. And then go eat their relatives at one of the restaurants !

As I recall it was a damned tasty. Bison meat is crazy tough so ground is the best way to eat it.

Washed down with beer, they're both great.

Supposedly, bison has less fat, but I'm not sure that's a "plus".

It's not so much about the animal, as it is the quality of the animals.

Don't buy cheap meat.

...really, very little difference. They're both grass/grain eaters, but cattle are a little more domesticated and have evolved/developed a slightly heavier and sweeter texture. Bison meat tends to be leaner, and I think that contributes to the drier texture. I actually like their meat somewhat better, but it's not as widely available, so beef is what's for dinner.

I think it's leaner meat so you don't get all that nice juicy grease. Apart from that they seemed pretty beef-like. I don't think it's worth the extra cost.

as wildlife and food, my chef friends buy bison from the reservation nearby, I'm not much of a meat eater so maybe that's why I notice the differences more.

Bison meat is better for you than beef as is has a lower fat content because bison don't fatten up without genetic alteration so it is a little drier but it tastes better even though it has lower fat. Fat is what makes beef taste good. But the introduced hormones are not there and bison eat grass and grain but mostly grass.

The most important difference is the dry factor so you need to consider that, otherwise for real red meat lovers, bison is the better choice flavor-wise and nutritionally.

I find the meat produces less fat drippings, but otherwise I enjoy it. Not too much difference, but a slight taste difference.
