California is not 1 separate contest.

There are 53 congressional districts in California. Election results at the district level is applied for their corresponding district when determining delegates. The election results at the state level is NOT applied to each district. A total of 317 delegates are involved.

There are also two other levels of delegates. The PLEO and At-Large delegates. 53 for the former and 105 for the At-Large. They use election results for the whole state.

Unless, the recent polls that have come out were conducted for each of the district levels at best they would only apply for overall result for all of California.
