Creamy Broccoli Quinoa Casserole

This casserole is amazing and packed full of nutrients. I've made this several times and it's a hit with the entire family (even the meat eaters).

My son (meat eater) is coming home tonight, and he asked for a double batch to take back to college for next week.

I have 3 casseroles in the oven.

2. I love quinoa and use it instead of rice in a lot

of recipes. It doesn’t get soggy like rice and freezes really well.

3. I like whole grain

orzo instead of rice. Barley and millet are also good.
