AOC tweet:

Ok everyone, I need help!

A few weeks ago I told @RepRaskin that this year I wanted to adopt a vegetarian diet for Lent in memory of his son Tommy.

Jamie said, “Well you’d have to do it the way Tommy would, which means bring people along with you!”

So, I have 3 requests:

1. Does anyone want to join me? Rules are 1) No judgement 2) Make it your own (you can go full 40 days, just veggie Mondays, etc 3) Be inclusive (no need to observe Lent to join)

2. Please comment w your favorite veggie recipes below! I would like to avoid 40 days of Easy Mac

(Pro-tip... make it permanent. Seems like a pretty good idea for the environment... just saying. #GreenNewDeal)

RIP

There are so many easy vege meal options today, for beginners to get their feet wet. I highly recommend it as a lifestyle.
Lovely tribute to Tommy and sweet of AOC.

Even when meat eaters come and stay with me, they don’t miss the meat.

I don’t really cook “vegetarian,” I just cook good food without meat as an ingredient.

Weight, blood pressure and cholesterol all lower. Everyone my age who gave up meat looks younger.

I would like to go vegan, but I love cheese (from goat & sheep milks, not cow milk) and ice cream too much.
While avoiding as many animal products as possible is good for the environment, it has reduced the inflammation around my joints so much that I no longer have any pains from arthritis. Still can't move well, but no pain!
