I take a tablespoon before I go to bed. It tastes horrible so I dilute it with a sweet liquid of some sort.

but I'm certainly not one of them.

One way I love it is in potato salad, cutting up the hot potatoes and sprinkling them with cider vinegar before they go into the fridge to cool. Yes, it seems to make a huge difference to the final salad.

Another way is in switchel. My own switchel is probably weaker on the vinegar and stronger on the sweetener than traditional recipes, but I make it the way I like it and it's incredibly refreshing on a hot day and a damned sight easier than lemonade.

I also use it in most salad dressings. I've tried all sorts of vinegars, but cider vinegar is my favorite--a little fruity without being overpowering like raspberry vinegar. I find I can use less sweetener to balance it than I've had to use in wine vinegars.


This switchel recipe looks interesting, fresh ginger and maple syrup. The proprtions of vinegar to water is about what I use: https://food52.com/recipes/37893-switchel It doesn't take much vinegar to get the tartness and flavor.

I asked her about it, every day she drinks about 3-4 ounces, diluted with the same amount of water.
