What's for Dinner, Fri., Mar. 19, 2021

Eye round roast with sauce of mushrooms, carrots, onion, and butter.

Vegetable terrine with zucchini, potatoes, carrots, and peccorino cheese. Bechemel sauce. Marjoram, parsley.

Coleslaw with coriander.

Dessert: Ice cream cone and coffee.

mini penne baked w/ Italian sausage, tomatoes, yellow bell pepper, broccoli, onions, mushrooms, garlic and grated parm.


I'll probably have an ice cream cone for dessert too.

Ice cream cones are great, too!

Unfortunately, my cardiologist frowns on those foods for me. I'll still have them from time to time!

2. Roasted chicken

We're on Ocracoke Island in the Outer Banks and it's storming fiercely today, low 40s with strong winds gusting up to 50 mph. We need comfort food!

Whole chicken with oyster, celery, onion, garlic, stuffing. Seasoned with fresh Rosemary, thyme, salt and pepper. Gravy, of course.

Small mixed green salad. Honied sweet potatoes.

Chocolate chip cookies.

The oven has helped warm up the house and give us a cheery feeling on such a dismal day.

not just because it tastes so good, but because of the great stuff you can make with the leftovers.

And yeah, warming up the house is definitely an added benefit.

I love the idea of oysters in the chicken stuffing.

The Landlady(!) owns a rental property here and it needs some sprucing up before the rental season starts in two weeks. I've been painting, repairing and cleaning. At least we're eating well!

7. Bone-in chicken thighs

When I pulled them out of the freezer this morning, I planned on making chicken fried rice but I’m tired after work. So, coated them in spices and tossed them in the air fryer I got for Christmas. We’ll see how they turn out.

Buttered Jasmine rice and garlicky green beans as the sides.

Chocolate for dessert- I found a bag of semisweet morsels in the back of the cabinet. Score!



ETA: They turned out great! Nice and juicy, and the crispy, spicy skin is to die for. I love crispy poultry skin. Easy clean up, too.

The boneless thighs I’ve made in the air fryer have been a little dry, bone-in is definitely the way to go with this machine.
