I just took an Italian Cream Cake out of the oven

It smells so good.

Tomorrow I will deliver it to a friend who bought it at a charity auction. She always orders Italian Cream.

Tonight the frosting goes on and then it goes in the freezer until I take it to her.

Pandemic has curtailed my baking activities so I really enjoyed making the cake.

Baking is my therapy.

What is your favorite cake to bake?

Usually the one I am currently making is my favorite, but some are more fun than others

Since I am the baker in the family I was tasked to make this twice a year for my family. There is no flour or butter/fat. You use 6 eggs, a pound of almonds and marshmallow fluff icing. It sounds gross but it is actually pretty good.

The one I am making is my favorite. Italian cream cake sounds awesome.

I made a carrot cake with cream cheese frosting for Easter. 3 layers. I’ll put it together tomorrow.

Raising three boys I have probably baked thousands of cookies in my life. And even though they are adults I still bake them cookies!

But they'd also eat oatmeal cookies (NO raisins) snickerdoodles, brownies, butterscotch brownies...

nut-involved foods, but they still have their limits. I too made allowances for their food dislikes, one of them couldn't deal with broccoli so whenever I had broccoli there was always an alternative vegetable. Now one of them is vegetarian, so I've had to up my skills.

....chocolate ganache and fresh raspberry compote.

It is the cake my daughter asks for on her birthday. It is delicious.....if you’re a lover of chocolate. It’s really rich, though. My family loves my New York cheesecake, too!

I am now wanting to make an Italian Cream Cake!!

13. Gooey Coconut Cake

This one is easy. I used to make it in a layer cake, but since only two of us home, I bake it in a sheet cake. Seems to keep better.

Betty Crocker White cake mix using egg whites only, add teaspoon almond extract. Bake in sheet cake pan according to directions.

Make a butter-cream cheese frosting, beat until light and fluffy and a little gooey. spread on cooled cake. sprinkle to with a lot of chopped coconut. Iuse a bag of Angel Flake and chop on the chopping board. Tried the shredded coconut, its seems to be dyer than the hand chopped. This is my family's favorite of all the cakes I bake and easy too since I am using a mix for the cake.

Others I make most often are buttermilk pound cake, poppy seed cake, strawberry cake
