Ingredients
1 tbsp coconut oil
1 large red onion thinly sliced
3 cloves garlic minced
1 inch fresh ginger peeled and minced or grated
1 tbsp garam masala
1/4 tsp ground turmeric
1/4 tsp ground black pepper (reduce to 1/8 tsp if freshly-ground)
1/4 tsp cayenne pepper (or to taste)
1/4 tsp salt (plus more to taste)
1 and 1/2 cups diced tomatoes (equal to 1 14-oz. can; drain before using)
1 and 1/2 cups full-fat coconut milk (equal to 1 14-oz. can)
1 and 3/4 cups cooked chickpeas (equal to 1 16-oz. can; drain and rinse before using)
2 tbsp freshly-squeezed lime juice (1 lime) (lemon also works)
chopped fresh cilantro (coriander) for serving

Instructions
In a large pan, heat the coconut oil over medium-high heat. Add the red onion with a pinch of salt. Cook, stirring frequently, until the onion is softened and starting to brown.


Reduce the heat to medium. Add the garlic and ginger; stir and cook for 60 seconds or until fragrant. Stir in the garam masala, turmeric, black pepper, cayenne pepper, and salt. Cook for 30 seconds more to toast the spices.

Add the tomatoes to the pan and stir well. Continue to cook, stirring occasionally, for about 3-5 minutes or until the tomatoes are starting to break down and dry up a little bit. Stir in the coconut milk and chickpeas. Bring the mixture to a boil, then reduce the heat to medium-low.

Simmer the coconut chickpea curry for about 10 minutes or until reduced slightly. Stir in the fresh lime juice. Season to taste with additional salt (I used about another 1/2 teaspoon at this point). Serve hot, over rice or other accompaniments of choice, and garnished with chopped fresh cilantro.

TO ADD HEARTY VEGETABLES LIKE SWEET POTATO OR CAULIFLOWER: Cut the veggies into bite-sized pieces, and add them after the initial step of cooking the onion, but before adding the garlic and ginger. Stir-fry for a couple of minutes until the vegetable is softened a little bit. It can then finish cooking when the chickpea coconut curry is brought to a boil and simmered.

TO ADD QUICK-COOKING VEGETABLES LIKE SPINACH: After simmering the chickpea curry, turn off the heat, stir in the spinach, and cover the pan. Remove the lid after 2 minutes, or when the spinach is wilted to your liking.

Ground chicken, seasoned bread crumbs, grated Parmesan cheese, 2 cloves minced garlic, chopped Italian parsley, salt & pepper

Form into patties, brown in skillet, flip over, pour in marinara sauce, simmer 10 minutes, top each Patty with a generous slice of fresh mozzarella cheese

Romaine lettuce and red onion salad

Skinny Cow ice cream sandwiches for the guys.

Made with smoked sausage, vegetables, and bone broth. It's pretty good at this point. Hoping that a little time will make it even better.

to make that...was pretty good too. I had a side of Birdseye frozen green beans on the side and they were surprisingly good.

Dad made something like that when he was in charge of dinner, after Mom had died.

(He also made the BEST pancakes.)

There were five of us. He also made poached eggs and potatoes and steak tips. If Mom went out of town, we ate liverwurst and poached eggs every day...steak was too expensive to make the cut usually, the best we could hope for was if he made donuts on the weekend!

My husband had roast veal, tender and delicious, served with a rice pilaf with mushroom and bell peppers. I had cevap, small sausages on lepinje, Bosnian flatbread that had been grilled. Our son had a burger with the same meat as in the cevap, also on a grilled lepinje. My son and I had Balkan salads, cabbage dressed with a vinaigrette, and my husband had chicken soup. My husband and I had raki, shots of distilled spirit, his herbal, mine quince. I'd been in a day-long food safety class, important but tedious, so it was relaxing to go out for a nice meal. Everything was tasty and well-presented, more European style.

ajvar or the sour cream?

I bought a jar of ajvar at the Polish deli. I find it delicious over Swiss cheese on a sandwich. I notice the Polish place spells it "ajver."

I have made it myself. I think I wrote about it on the "what's for dinner" thread. It's been awhile but I do recall it was a lot of work and took quite a long time to make it.

Trader Joe's carries it but I like the Polish deli version, which is "Brian's." They have so many products out under the Brian's name that I thought they were a big company, but they're local.

It was fun looking at that menu.

My son's dish came with ajvar and mine with sour cream, so we traded. The impression I get is that the Bosnians around here know about and might make ajvar themselves, but it's a real project, so they usually buy it. I think what can be purchased here is Croatian brands.

There's a big beautiful, delicious world out there, and learning about other cultures, especially via their food, is so rewarding. I think conservatives' isolationism is just stupid.

Pork tenderloin is one of the best pieces of meat-- as long as your religion allows it!-- and it's so very reasonable.

BONUS: It's really healthy.

I love to grill, too so I hope you enjoyed your dinner.

We had a weird combo tonight. My son is visiting and he loves guacamole so we started with that.

For dinner, we changed continents and went Asian. Seared tuna steaks in a black 'n' blue style served with wasabi and pickled ginger. This was accompanied by a bowl of very thin noodles with chopped vegetables.

Dessert was slices of oranges.
