What's for Dinner, Sun., June 20, 2021

Big tossed green salad with maple chili glazed tofu, which will be fried until its crispy; then put in the glaze. Toasted pecans on top. In the green salad will be scallion, sliced cucumber, and chopped apple. I picked the lettuce for this early this morning.

Dessert: strawberries over angel food cake with whipped cream.

NY strip steaks, roast potato wedges seasoned with Old Bay, roast asparagus, peach cobbler for dessert. My husband bought some Dubonnet to try it, so he's having a Queen's Cocktail for an aperitif (Dubonnet, gin, and a lemon slice)(QE2 is said to have one every day before lunch)

3. Pulled pork sandwiches.

Slow roasted a Pork Butt four hours at 200 degrees. I used a Mesquite seasoning for a rub and injected the pork with Apple Juice. Pulled the pork myself by hand and for sauce I used two parts Sweet Baby Ray's BBQ sauce and one part Asian Sweet Chili sauce. I put it on Artisan rolls. Except for the rub and sauces, this was all Food Bank food.

Four Pound Pork Butt so lots left over. I'll probably freeze some of it.

Fresh broiled walleye with lemon and basil
Asian stir-fry zucchini and peppers
Biscuits and butter
Fresh blueberries and sliced peaches with cream
