My daughter made chocolate chia seed pudding when we were on vacation together. It seemed easy and I like chia seeds.
She used maple syrup to sweeten her batch. I'm using date syrup to sweeten mine. The date syrup made the pudding dark, so it looks like chocolate. I'm hoping it'll have a consistency like tapioca. I'll make chocolate the next time I try. I saw a lot of chia seed recipes online when I got the one I'm using.

I saw it at Kroger. Funny thing, the Kroger ad showed Date Lady organic date syrup as having no sugar and 13 grams of fiber, so that got my attention. Unfortunately, that information wasn't correct. Date Lady date syrup has 13 grams of sugar and no fiber. But it equals maple syrup in nutrients. I have been wanting pancakes, but not sugar syrup.
I made almond flour pancakes a couple weeks ago, and used the date syrup. I got 3 pancakes, about 30 grams of carbs. much better than 90 I like the date syrup.

It is a little thicker than maple syrup, although that varies by product. I read several reviews before I picked Date Lady.
