Anybody here make their own ice cream?
is there an easy way to make it, say, without an ice cream maker?

4. you can make a pretty good no-churn ice cream with condensed milk and heavy cream you whip yourself

Basically you mix your flavoring in with a can of condensed milk and set aside. Whip up two cups of heavy cream to stiff peaks, then fold one cup into the condensed milk, then fold that combination back into the cream. Put it in the freezer for a few hours and voila. It won't have quite the same texture (closer to soft serve than store-bought or churned ice cream), but it can be fun to experiment with. If you want something closer to hard ice cream, you can make a custard base, cover it, and chill it in the fridge overnight. Meanwhile, put a large mixing bowl in the freezer, and when you're ready to make the ice cream pour the base in the bowl, mix it with a mixer for about a minute, and put it in the freezer for 10-15 minutes. Repeat that several times (for 1-2 hours, depending on how thick your base is). That will churn a good amount of air into the mixture. Once it starts to get thick and difficult to mix, let it ripen in the freezer for a few hours and it will harden to something closer to the texture of hard ice cream. 20. my aunt used this freezing method (mix, freeze, mix, freeze)
when she made ice cream with cream skimmed off the top of fresh milk from her cow.
Interestingly that cream did not whip up stiff just thick. It was good but strange. I miss all that old fashioned cow in the shed milk. |

9. Check the Chef n Sweet Spot ice cream maker on Amazon.
It’s basically a dish and a couple of paddles kind of like spatulas, rather than the thing you put in ice and crank.

Especially if you like ben n Jerry's chunky monkey...and it's healthy!!
2 bananas cut into slices...freeze them. Add frozen banana slices to blender, blend til almost smooth. Add walnuts and dark chocolate chips/chunks. Blend just a bit more to incorporate walnuts and dark chocolate... Enjoy! This is dairy free and only added sugar is in the chocolate....comes out creamy like ice cream but healthy! Eta: whenever our bananas start to go bad we just cut them up and keep them in the freezer so we are ready to make this |

16. I urge you to get a little ice cream maker
I bought my first one over 30 years ago. Had so much fun making ice cream, frozen yogurt and sorbets. The old one bit the dust and I bought another. I bought a Cuisinart brand for about 60$. It makes about 1 1/2 quarts.
This is a timely post as I purchased 2 ripe mangoes today to make mango frozen yogurt in my ice cream maker. To get started, you just put the tub in freezer until it is frozen solid. Then make your mixture, chill it and chill the paddle. Pour the mixture in the frozen tub, put the tub on the base, paddle in, lid on, plug it in and let it spin for about 15 minutes. Here are some of my recipes that I concocted: toasted coconut ice cream, butter pecan ice cream, buttermilk cinnamon ice cream, Blackberry frozen yogurt, caramel frozen yogurt and of course mango frozen yogurt. When I first got my ice cream maker, I made ice cream the classic way, heating milk, beating in eggs yolks and sugar, then cooling and adding cream. It was good, but not enough better to justify the extra steps. Also I do not use any eggs in my recipes. I like to use cream, but have also used condensed milk.. I make peaches and Bourbon ice as well Brandy Alexander ice cream. I started out with the recipe book that came with ice cream maker, but making ice cream is so simple that I just started making up my own recipes And if I goofed up, we ate the mistakes. I keep the tub in a plastic bag in my freezer, so it is ready to go if we want a little ice cream. The only bad thing about owning an ice maker is that you are sure to put on a few pounds. |

17. You can get a tub of vanilla frozen yogurt. Let it thaw for 1/2 an hour.
Stir in your favourite flavours (I like lemon and lime: both zest and juice) to taste then put it back in the freezer to harden again. Serve in chocolate cups.

18. Have a food processor?
Frozen fruit plus yogurt in a food processor gives you something that’s very much like ice cream. The trick is to grind up the fruit first, then add yogurt. Depending on the fruit, you may need to add a bit of sweetener. I like frozen mango with full-fat Greek yogurt.

It's fast and easy and the ice cream or sherbet is good! I got myself addicted to making amazing lemon sherbet that was as puckery as i dreamed of!
