I bought 2 bags of fresh green onions and didn't use them as I planned. A long time ago, one of my Costa Rican friends made a pan of green onions sauteed in butter and lemon juice, cooked tender crisp.
I love them, but always do other things with green onions I buy. Since these had been here a few days, and I kept forgetting to use them, I cleaned up the onions and did them this way. I forgot how good they are. I didn't measure, and don't know if the recipe has a name. But I need to make this dish more often
I have been getting green onions from Aldi. They are cheap and last, even after you open the package.

(46,036 posts)We called them scallions on the east coast. Green onions on the west coast. At least, that's what I think the OP is talking about. I don't think they mean the Mexican ones that have a small onion on the end.

(16,935 posts)The bag is labeled green onions, but they are thin the entire length like scallions, and not with a real fat bulb like spring onions.. Most of the Google results say that they are the same except size and when harvested.

(46,036 posts)My favorite way to eat shrimp now. From the NYT.
Soften some butter (about 1.5 Tbs for one person) in a bowl. Add hot sauce to your preferred heat level. Cut some green onions into pieces and inch long or so. Sautee green onions until crisp tender. Add to the butter and hot sauce.
Add about 12 largish peeled shrimp per person to the hot frying pan. Cook on one side for a minute or two. Turn over and cook the other side. Add to the butter, hot sauce, and green onions and toss to coat.
I love this.

(5,111 posts)They would be good over potatoes or rice and fish or chicken. Im going to have to try this. Maybe add some smoked paprika and chili flakes. Tasty way to use green onion and they are cheap. But when I buy them theyusually go bad before I get to it.

They were served to me the first time as a side dish, so that's how I used them. I think they would be good on or with anything
I like adding chopped green onions to most of my meals. Also chili flakes Color and flavor
