Let's hear it for leftovers!

I roasted chicken with the Kroger brand Italian veg mix on Sunday. I added sweet onion, garlic, a fresh tomato chopped up, and spices. It turned out good and brothy. Yesterday was my birthday, so I broasted some chicken over Italian green beans, onions, cut up potatoes and spices. I didn't want to have leftovers on my 'special day', so I cooked. That dinner turned out good and I should have enough left for tomorrow and maybe Friday.

I finished the Sunday cooking today, and it is really one of those meals that gets better if it has a chance to blend.

I know some people don't like leftovers, but it is so nice to come home after watching the grands and having something healthy and tasty to warm up So, yay leftovers!

We had a roast pork last night. The leftover pork is being re-purposed for tonight's dinner. (Cuban sandwiches!)

chicken or vegetarian. Another idea for cooler weather

Before my daughter gave me a jar of Jamaican jerk spice that I've been using all summer, curry spices were my go to

what ever protein source I got & veggies. I make it so often over the last year I just eyeball amounts now.

I do for baking, for sure

When my Mom cooked, she never followed a recipe, and loved to 'doctor up' canned sauces. Althoguth she made the best vegetable beef soup, barley soup and split pea soup, she also made soup out of all the leftovers, and it was never the same. She said she liked that it was different every time. I started calling it cream of leftover and my son-in-law called it Myrtle's gruel. lol Anyway, I cook the way she did, but I miss her touch

because I had religious studies. Now it's Tuesdays and Thursdays because I have class. Tonight I'm cooking up some chicken tenders. Not sure exactly what I'm going to do with them but there will be plenty.

better for you re- diabetes too. reheated you absorb less sugars.

I've been on a low carb diet for almost 2 yrs. Always looking for ways to remove sugar from my food

reheated showed far lower sugar levels. so we make pasta ahead of time.

We either call them 'repeats' or 'encores'.
Sometime threepeats.
It's good to get out of the kitchen for a day or two.

Endless possibilities. Living in Texas. I turn to TexMex. For left beef pot roast I make filing for enchiladas. I use the leftover carrots and potatoes with the beef. Chop all up. Brown chopped onion and garlic in a little oil, stir in the leftover meat, potatoes and carrots. add a little water, pepper, cumin, some chopped green chilies if you have any on hand. Make enchiladas usual way with corn tortillas and canned enchilada sauce, top with grated cheese and some black sliced olives if you have any on hand. Bake at 375.

Leftover pork roasts makes green pork tacos. Brown chopped cold pork, add some fine minced garlic, can chopped green chilies, little water or left over gravy, cook a few minutes. have ready - chopped onion, chopped cilantro, fresh made guacamole. Put pork filling in warmed taco shells, then add raw toppers. Spoon on some sour cream, then salsa verde (St Jacques is my fav). Yum, Yum.
