At outdoor restaurant with friend having chili and cornbread. Breezy cool here!

(68,551 posts)and salad. I used brown sugar and garlic on the salmon. It was very good. I think I like maple syrup better though...sometimes I use mayo with finely chopped onions too...love salmon.

I'm going to have some green beans from the garden.
Who knows what else I'll find in the 'fridge.
I'm making up for hospital food.
FLFC had some trimmings off a steak, but I think it is not to to his liking. He liked it yesterday.

(38,549 posts)The stuffing is: the last of the roast pork, ground beef, rice, and finely diced veggies (orange bell pepper, broccoli, celery, onions, and garlic--all sauteed in some bacon fat). I melted some cheese on top at the end of cooking and sprinkled some fresh basil on top when it came out of the oven.
Some buttered corn on the side.

(1,706 posts)from a NYT newsletter that I get, a "no-recipe recipe". Chop tomatoes in bite size pieces, sliver a little red onion, place in a big bowl and salt and pepper them. After ten minutes or so, add an unseemly amount of olive oil and let sit for an hour or more. Close to serving time, it said to tear up some basil leaves (and I think arugula too). I have some basil I put in the food processor with olive oil and froze in tablespoon-size dollops, I used one of those. I smashed a clove of garlic and let it join the party for awhile. some pasta, drain it, add it to the bowl and mix. Top with parmesan or romano or other strongly flavored cheese. Was very good!
For dessert, I found some Luscious (that's the name of the variety) pears. I poached them in red wine with sugar, cinnamon, lemon zest and juice and vanilla. We'll have them later, with the reduced poaching liquid.

Raining torrents here from early bands of Hurricane Ida. This will probably be all we'll get - loads of rain.

Accompanied by what we used to, in our non-PC days, call "squaw corn" but now call "southwest" or New Mexico corn---something I learned from a college boyfriend who was from Albuquerque, It's corn with peppers, onions, and tomatoes, but cooked in a particular way. It requires bacon first, then once the bacon is cooked and removed, the onion, peppers, and some garlic are sauteed, then the corn is added, and the whole thing is steamed for awhile. Tomatoes go in at the last minute or two. Bacon is crumbled in just before serving. We like cilantro on ours but I realize that's a matter of taste (genetic).
When I first ate this, it was highly variable and usually made with frozen corn because after all, we were college kids and not well off. Sometimes cheese was added. Sometimes we didn't have bacon. Once when we didn't, Billy ran down to the corner convenience store and got some lard because we didn't even have any bacon grease left. In recent years I have occasionally added queso fresco but I prefer it without. I usually make it only in summer when there's fresh local corn and tomatoes available.
