What's for Dinner, Fri., Sept 3, 2021

Pork chops with stuffing. Tossed red leaf lettuce salad.

I used a spice combination as a rub on the pork chops. It's from my Voyager Collection and is called "Ararat," and it has Urfa pepper and smoked paprika in it. I seared them and put them in the slow cooker.

I made stuffing from a box and put dried apricots in it. First, though, I marinated the apricots in warm orange juice. I am adding pecans to the stuffing mix, too.

The salad will have red and yellow peppers, sliced onion, and cherry tomatoes in it.

For dessert, watermelon.

With some of the last of our tomatoes.
Also, homemade slaw, standard, nothin' special.

Oh, we've been canning.
Chicken Soup with roasted vegetables.
Peaches.
Rasam.
Tomato Sauce.
Corn Chowder.
Pasta Sauce.
Whole tomatoes.
Corn.

It’s time to use the last container of Bolognese as it’s finally thawed. Before we left NYC on our sailboat, we froze a bunch of meats and containers of sauces to help keep the ice box cool. We usually put two 5-pound blocks of ice in the bottom of the ice box then put the frozen items on top of the ice. There’s a removable Plexiglass shelf that goes over this base; it has large holes in it so the coolness gets to everything. Cubed ice doesn’t last very long so we use a cooler and restock it whenever we’re at a dock.

Bolognese sauce on spaghetti, a simple salad and garlic bread. Orange slices for dessert.

Basically a supreme pizza with fresh veggies, olives and mozzarella in a frying pan browned under the broiler.

A doctored-up frozen 3-meat pizza. I added onions, peppers, garlic and extra cheese.

A salad similar to yesterday's (romaine, shredded carrots, and red onion dressed w/ olive oil and lemon) but today I was able to get a tomato out of the garden, so I added that too.

lettuce and tomato on the burgers I bought a watermelon a couple of days ago and some really sweet grapes too. So we had those too. Cher, after reading your posts where you mention watermelon, I must go out and buy one! I made magic bars for dessert...you know with graham cracker crumbs although I used gluten-free vanilla wafers, chocolate chips, pecans, and condensed milk. We had lemonade and iced coffee to drink...and I drank a glass of milk with the cookies. My Mom made these so I always think of her when I make them.

10. I love to bake too...not great for my waistline though...we now only bake on weekends...sigh.

They are really good and so easy to make. They are also budget-friendly. The recipe makes a 13 by 9 by 2 pan. Happy baking.
