(23,302 posts)Ive been brining it since this morning. Chili rellenos made with poblano peppers from my garden. Tossed green salads with carrots, cukes, tomatoes and purple bell pepper also from the garden.

Ingredients
12 lbs firm white fish (tilapia, mahi-mahi, snapper, black cod, catfish) or 1 pound extra firm tofu (46 ounces per person)
46 inch flour tortillas ( or a blend of flour and corn) 2 per person
--I am using flounder b/c it was on sale--
Spice Rub:
1 ½ teaspoon chili powder
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon granulated garlic
3/4 teaspoon kosher salt
½ teaspoon sugar (optional)
¼ teaspoon chipotle powder (or sub cayenne and a little smoked paprika)
for more smoky flavor, add ½ teaspoon smoked paprika (optional)
Cabbage Slaw:
1 pound thinly sliced or shredded cabbage ( green and purple is nice)
½ teaspoon kosher salt, more to taste
¼ cup thinly sliced red onion, more to taste
½ cup chopped cilantro (packed), ½ of a large bunch
¼ ½ of a jalapeño, finely chopped, more to taste
¼ cup fresh lime juice, more to taste
2 tablespoon olive oil
Instructions
Preheat grill to medium-high heat. (See notes for oven or stovetop version)
Prep the fish: Rinse and pat dry fish. ( For tofu, read notes below) In a small bowl, stir fish rub spices together. Sprinkle all sides of fish lightly with the spice rub (you most likely will not need all). Set aside.
Make the slaw: Place the shredded cabbage in a medium bowl. Toss with the salt. Add the onions, cilantro, jalapeño, lime juice, olive oil and toss well. Adjust lime, salt, and jalapeño, adding more to taste you want this to taste tangy and flavorful.
I made the slaw, then fried the 5 inch corn tortillas, set then in a warmed toaster oven while I pan seared the thin flounder slices.
Pan-Sear: This is the easiest and quickest way to cook this recipe. Heat up a skillet coated with oil, and pan sear the spice coated fish or tofu, until golden, crispy and cooked through. Squeeze with lime.

(68,539 posts)was made in the delis on Sunday. We went to church and Dad went out and got it for lunch. I had hotdogs on the grill, potato salad, and a big salad with everything but the kitchen sink dressed with homemade ranch ...for dessert an apple pie dump cake...really good...used a gluten-free cake mix. We had diet Pepsi or lemonade to drink with dinner and coffee with dessert.

(4,603 posts)My favorite kind, where you throw in everything that catches your eye. I made it at work for my lunch. It was HUGE, so I brought half home and added some more stuff from my fridge.
Spinach, salad mix with shredded carrots and cabbage, a beautiful piece of sautéed salmon, bacon, broccoli, cauliflower, chopped up fried onion rings, diced tomato, diced potatoes (put lemon juice and cajun seasoning on them while they were still hot), a shredded up fried chicken leg with the crispy skin (why not, lol!), and dried cherries. For dressing, ranch mixed with with J.O. crab seasoning.
It was goooood. Im so stuffed right now.
Later on: a warm, chocolate frosted brownie and ice cold milk for midnight snack/dessert.

Here are a couple things I added to my salad tonight:
pepperoncini
black olives
peppadew (they are so pretty!)
toasted wasabi almonds
toasted pumpkin seeds
chia seeds
Time for tea and dessert and I am having a probiotic cookie. Can you imagine? I would sooooo much rather have a warm, chocolate frosted brownie.
