Cooked up a storm the last couple of days

last 3 days-on Thursday, I made spicy cucumbers and a salad plate with spicy chicken and avocado. Friday, I baked a loaf of bread and had enough dough to make 4 buns, also sauteed a veggie medley. I had a hard boiled egg left, so put it in some soy sauce. I'll have it sometime today. I love soy eggs. Amazing how such a simple addition profoundly changes the flavor of the egg.

Yesterday was the day. My daughter brought me 2 eggplants, and one needed to be used up. I stuffed the fresher one and baked it. Trimmed the other one, and shredded it with the last zucchini, onion, garlic, spices and sauteed that, with the idea I'd make Zatarin style olive salad. There was a lot I had a large green pepper that had to be used, and I added some tika misala sauce to some of the shredded, sauteed vegs, and stuffed the peppers with the mix and put them in the oven alongside the stuffed eggplant. I used the rest of the shredded veggies and added the last bit of artichoke salad I made last week, shredding it as well. I ended up with craprese style stuffed eggplant, which is easy, but very showy, stuffed peppers, and the olive salad, which i can spread on thinly sliced bread it I need a carb fix. Needless to say, I don't have to cook for a few days. Have I mentioned that I love eggplant?

For breaksfast this morning, I had a couple of thin slices of toast off the new loaf, topped with cinnamon and date syrup, blueberries on the side. Enjoying my food choices very much!

I've used up almost all of the fresh veggies I had, and need to restock later this week. Happy end-of-summer bounty days!

Everything always looks so good!

And then I hustle to use things up. Without a stand alone freezer, that's a problem sometimes.

Right now I have a pint of huckleberries to use. They weren't cheap. Foraged at 6,000 feet on a local mountain. I think I'll just make a little syrup from them to have on ice cream in winter.

The huckleberry syrup sounds good. It'll be a nice treat this winter
