We use it within 2-3 months, it can probably be stored longer.

To thaw it, we put it in the fridge if we don't mind it taking a couple days. If we need it faster, we leave it on the counter for a few hours before putting it in the fridge.

Either way, I'm told it's a good idea to turn the container upside down and back a couple times as it thaws to keep it mixed well.

Also, if it came in a glass bottle, don't freeze it in that.

We freeze milk all the time. It has never separated.

It doesn't taste quite the same, however. I really don't like it plain but for coffee or cooking, it's fine.

You can store it at room temperature for months. It's more expensive because it's packaged in small quantities, but if you only use it for recipes it might be more convenient than trying to freeze.
