What's for Dinner, Thurs., Oct. 21, 2021

Posting early because I'm leaving for Red Bank to have dinner with friends. We are going to a seafood restaurant. I've already looked over the menu and here's what I'm having:

Salad: Mixed Greens, Cucumber, Apples, Dried Cranberries, Candied Spiced Pecans, Creamy Pumpkin Vinaigrette

Soup: Lobster bisque.

We're going a bit early to dine outdoors before it gets too cold. Also to beat the evening dining rush.

because it was so darned good. Anyhoo, I encourage everyone to make this soup because it is flat amazing and even my hubs who says he doesn't like soup for dinner (yep, he's a weirdo) says I can make it any time at all. I added grilled chicken to the soup so Mr. Needs Meat At Every Meal didn't feel deprived.

Pan-fried Cajun style served with red beans and yellow rice. Imgoing to take a stab at making the cornbread loafs NJCher posted last week. Ice cold beer to wash it all down!

Lasagna with beef sauce.

We're not so hungry since we ate a late lunch after errands.

FLFC rejected everything at first but acted hungry. He then accepted part of a Tums and belched a few minutes later. He then ate some beef set aside from the lasagna and also a chopped up Vienna sausage.

with shishito peppers, garlic, onion, red bell pepper. Seasoned with black pepper and Slap Ya Mama cajun seasoning. I used a little chicken stock to make a sauce then tossed in some rotini. Topped with a little cotija cheese and green onion

I really just wanted to use up some things in my freezer and refrigerator, and it turned out to be pretty good.

I could eat a whole pan of them. That and good fried okra. There's a fast food chain in OK & TX that I will sometimes stop at and get 3 chicken nuggets, and a large box of okra. They have the best chicken, okra and rolls. If they had shishito peppers, I would probably be paralyzed by indecision, or just end up getting a large order of each.

When I make them at home, it's always with a small piece of fish or something so there will be more room for the peppers.
