What's for Dinner, Fri., Jan. 7, 2022

Spanish Bean Soup with Chorizo, using cannellinis. Has zucchini, tomato, chicken, thyme, leeks and onions. Parsley. I'm using chorizos I found at WF.

Might make some sort of sandwich or wrap to go with it.

Dessert: not sure yet. Might post back when I decide.

Tortillas). Knew it was going to be a snowy day, so I went to my favorite hole in the wall Mexican restaurant yesterday. Tiny place, tiny menu, but oh so good. They work miracles on a small grill.

El Pocho’s, Lewiston, Me.

Roast a turkey breast from the freezer
Mashed Potatoes(instant)
Box stuffing
Corn on cob from frozen
Gravy from a can
Yeast Rolls from frozen dough balls
Apple, honey baked from the deli counter

Not much real cooking going on here, but it was good. We shared the dinner with our non-cooking neighbor.

FLFC was into the turkey skin big time. His dessert was a plate of Temptations.

I spend most afternoons with my partner in the hospital, so fast and simple evening meals are best.

Defrosted a package we made a few months ago. The rice was a bit mushy from being frozen, but a quick meal otherwise.
