Eggplant parmesan. I made new tomato sauce from tomatoes I've frozen from my garden, but had about 10 breaded eggplant slices from the other day, so decided to make the rest. I only made one serving last time, so it still sounded appetizing. Fresh basil sliced over the top.
Tossed green salad with avocado cilantro dressing. I'm putting in sliced peppers, both red and yellow, scallion, radishes, and celery. And my last cheddar stuffed green olive. Those olives are my fave!
Sliced apple for dessert. Sweet 'n spicy Good Earth tea.

(10,134 posts)the last of the Costco ribeyes, defrosted; local artichokes with aioli; salt-boiled fingerling potatoes. I think this is the first red meat of the new year - and the leftovers will be lunch or dinner tomorrow!
