What's for Dinner, Thurs. Jan. 13, 2022

I read the tuna salad thread and decided that's what I'd make. I put chopped celery, carrot (minced tiny), scallion, and pickle relish. I am toasting almonds to go over the top. I can stuff red and yellow sweet peppers with it, or I might put it on a wrap.

My dressing was a mixture of mayo, lemon juice, mustard, and a little half 'n half.

homemade except for the crust. A friend gave us a couple of frozen cauliflower crusts and we're going to use those.

pizza will be bacon, onion, peppers, garlic and extra cheese

dessert is rice crispy squares

Boneless pork chops, breaded and pan-fried.

Mashed potatoes and steamed green beans.

Red wine and dark chocolates for dessert.

Simple but elegant. I hope!

Yeah, technically they should be made from skirt steak, but I use what I have

Haven't decided on sides yet, maybe a salad with snow peas and blood oranges (that tree seems determined to supply enough fruit to feet the world - I've already given 3 buckets of oranges to the neighbors)

with snow peas, broccoli, scallions, spinach and shiitake mushrooms. I’ll have mine on hand cut wheat noodles and hubs will eat his on rice. Szechuan chili oil drizzle on top. I need some spice tonight.
