My mom learned how to make it from him. Use to be her go to meal, when she was late home from work or shopping. Still love the stuff 65 years later.

would love to come up with a vegetarian recipe for this. It was so delicious, that creamy gravy over toast was sooo yummy.
I was born on an AFB in Japan during my dad's assignment overseas (Japan after Korea)

there are many new cookbooks out using the new plant-based meats, fish, and chicken. That might be one source.

But the other would simply be to buy one of those products in the "beef" area and use it with the regular recipe you'd use.

for convenience I have been using the well known veggie burger patties for quick sandwiches.
I will be trying this new SOS sub-recipe one day soon! Can't wait to have my kitchen put back together, I have had major disasters with a rebuilding project in my home. In the meantime, while at home I subsist solely on grilled sandwiches and smoothies.
