I have been sticking to low-carb pretty well since the holidays, but wanted something sweet. I had some leftover graham cracker crumbs and some ground walnuts, so I mixed them (half/half) with some butter and Monk's fruit sweetener. I used about 6 oz cream cheese, about 3 oz sourcream, an egg, some Monk's fruit, vanilla, and lime juice. Baked it at 325 for 40 minutes. I think it is lower carb than a store cheesecake and it sure is exactly what I wanted
I didn't measure anything. I baked at 325 because I was using a vintage Pyrex or Bake King glass pie plate.

Some nice DUers recommended it when I mentioned I didn't like the baked aftertaste of Stevia. It isn't supposed to have carbs. I got Lakanto brand granulated. The label says it has 8 grams sugar alcohol, which I don't think counts as a carb. I got 1 package from Amazon. Then, I was in Big Lots before Thanksgiving and they had the same brand, same size package for half the price of what I paid on Amazon. I do like it better for baking than Stevia.

(22,767 posts)Cheesecake is the sacred dessert in our house. It's always Bon Appetit's Basque Burnt Cheesecake recipe. I'm not allowed to make any other kind since the first time I made it a couple years ago. Works for me me since I prefer it without crust. I don't make it often at all because the two of us will burn through it faster than we should.
