Three meats: Ground beef, ground veal and ground pork. Add an egg, bread crumbs and spices to taste. Mash it all together and bake in a bread tin. I like to melt cheddar cheese on top towards the end instead of ketchup.

Mashed potatoes with beef gravy. Pan-fried green beans. Cherry tomatoes for color.

Dark chocolates for dessert.

I'm so excited! Haven't made on in a long time. Waiting for the oven to heat up right now!!!

Have a big loaf of Italian bread (we're splitting half of that between the two of us), added some butter and garlic, Calabrese Salami with peppercorns in it, some capocollo, pepperoni, provolone cheese, banana pepper rings. Going to toss some sweet onion and leaf lettuce in a vinaigrette to put on it after it bakes.

I can hardly wait!

I'm eating micro dinners, need to drop a little weight put on over the fall. My "steak" is about 2 ounces, and very lean.

Dessert: Ginger snaps.
