I had the ingredients, and I wanted to use up the 1/2 pack of Phyllo dough I had in the freezer. My away daughter is coming for the weekend, and thought it would be a nice treat for her visit.
It sure smells good.
I've eaten spanakopita a few times. When I looked at recipes online, one recipe said to have a slightly sweet flavor, no garlic, but the spanakopita I had was not sweet, so I found a recipe that used garlic and I hope it is close!

(14,176 posts)I've always been petrified of using phyllo because I was sure I'd rip every piece of it if I tried to use it. It was a lot easier than I imagined--and I only tore one sheet.

I am the least likely person to use Phyllo. It is probably a good thing I was clueless when I made my first batch of baklava. And in a related effort, spring rolls. (no reflection on you!)

(11,415 posts)with olive oil I had it all over the place. It made a huge pan worth. I ended up cutting it up in to servings and freezing them. I think it freezes well. I went to the dollar store and got a small spry bottle and use it for applying olive oil to the sheets. I might end up using less oil and be less messy.

(16,934 posts)I use a pastry brush and don't worry about covering the whole sheet with oil. The whole is greater than the parts
