What's for Dinner, Tues., May 10, 2022

Turkey bacon cheeseburger with lettuce, onion, tomato, on Brioche roll. I made turmeric mayonnaise, so I might use that on the roll.

Red coleslaw with apple and raisin.

Dessert: 2 mango mochis and decaf coffee.

Cole slaw
Homemade tartar sauce

A couple of our neighbors are coming for dinner and it's a lovely day in the mountains.

For an appetizer, I'll grill slices of marinated egg plant then dust them with grated Asiago cheese. A bowl of mixed olives and baguettes & olive oil will be on the side.

The main dish will be boneless chicken breasts, also marinated, grilled then sliced. The Landlady(!) is insisting on making her delicious cold fusilli & pesto salad topped with roasted pine nuts and halves of cherry tomatoes.

One of our guests is bringing dessert and since she's an amazing chef, I'm confident it will be delicious.

I saw these words of wisdom today: The heavier you are, the harder it is to kidnap you. Stay safe and eat cake!

I was lucky enough to find some nice sushi-grade tuna today, so cubed it and mixed with soy, sesame, onions, peppers, etc.

Ham, onion and extra cheese.

Yeah... carbs.

I should probably clarify that my plan wasn't to completely eliminate carbs, but to cut way back.

I don't think having a pizza night is the end of the world.

Mainly cutting back on them because of Al's diabetes. Seems like a losing battle though as I am an "early to bed" kind of person, and I know he's eating cereal, graham crackers, and the like after I hit the hay.

But I could stand to lose a few of the COVID pounds I've gained, so I'm going to keep at it. Besides, carbs in the morning just make me feel icky.
