(13,564 posts)quesadillas only take a couple of minutes in a pan for cheese to melt.
Flour tortillas
Grated cheese
pickled jalapenos
sliced black olives
sliced green onion
Cover half a large flour tortilla with the ingredients, fold over into half moon shape. Toast in the pan on one side, then flip.
Serve with guacamole, salsa, sour cream, whatever else sounds good. Maybe some rice, or corn alongside.

diced celery
diced good-flavored apple
grapes, halved
unsalted roasted cashew nuts
Mayo mixed with curry powder, for dressing
You could add other fruit. Pineapple, maybe? Blueberries? Could serve in half a small cantaloupe.
Serve with good rolls of some kind. Croissants are perfect, if you can find good ones in the bakery section.

cook once and freeze 4 or 5 other meals.

(11,853 posts)Cant wait to get some good tasting tomatoes to do that with. We just put our plants in today, but before theyre ready, we can drive over the Del. Memorial Bridge to our favorite New Jersey farm stand and get some tasty ones.

(101,702 posts)Since the only appliance, I really use in the hottest part of the summertime is the Instant Pot to make yogurt, I'm not much help, I'm afraid. That said, a good blender (like my beloved Vitamix) can make one hell of a cold gazpacho soup, too. Cold salads like egg, tuna, and all types of chicken salads to make wraps or in burrito type tortillas are a staple too.

(1,088 posts)I put the frozen falafel in the air fryer. I make an easy gazpacho (salad in a bowl!) and include whole wheat naan. The tabouli has lots of parsley.

Fresh refrigerator pickles in a brine you ckeep all summer while you add new cucumbers and onions, as needed.

(16,949 posts)I thaw frozen broccoli florets, dice up some of those little different colored sweet peppers, black olives. A little feta cheese, a lot of Zesty Italian dressing. Make it in the morning or the day before. Its filling but since its cold its a nice summer dinner.

(2,672 posts)Elbow Macaroni, canned tuna fish(drained), chopped dill pickle, onion also hard boiled eggs, mixed with Mayo, season with salt and pepper, serve with sliced vine ripe tomatoes and potatoes chips plus big glasses of iced tea.
