Something really simple. We are having company for the weekend and I'm already exhausted thinking about entertaining .

(it's too hot to cook!) with cream cheese, canned red salmon, chopped tomato, cucumber, green onion, grated carrot and ribbons of spinach, and dill weed. The boys don't love them but will eat them.

pan grilled one NY steak, sliced thin on greens. Very satisfying. Meat portion is about 4 oz each, which is just perfect.

Lotta lotta cooking going on here tonight and tomorrow. Key lime pie, a flag cake w/berries for the little ones, home fried chicken from Knott's Berry Farm original recipe, BBQ baked beans, grandma's vinegar-marinated cukes and sweet onions, deviled eggs, etc. etc. etc.

Dollar store had such cute and festive paper lanterns for July 4, battery operated -- I got half a dozen. Kids will have fun decorating with those and pinwheels, and balloons, and red/white/blue tiny lights, and paper star garlands. Priceless memory making.
