Going to dinner at my friend's house, where she's cooking out on her patio. Grilled chicken, potato salad, BBQ beans, macaroni salad. The usual July 4th menu.
I'm taking a tossed green salad and for dessert, sliced watermelon.

Dessert will cannoli ice cream topped with blueberries and a drizzle of limoncello.

A friend brought Al some mac & cheese yesterday, so there's some of that.
There's also some leftover pasta and sauce from when we had chicken parm.
First come/first serve.

(22,767 posts)fry some double dredged skinless, boneless buffalo chicken thighs for sandwiches with bleu cheese dressing, lettuce and tomatoes from the garden with fried yellow potatoes, and fresh corn steamed and cut from the cob.
Cheesecake is gone, so there will be dutch chocolate ice cream later.
Update: Husband changed his mind. He had a yellow squash ready in he garden so I sliced and sauteed that in olive oil and butter, salt,pepper and garlic.
I ended up only eating a small piece if tomato and some corn.
I made great veggie soup, homemade rolls and quick pickles. However, I am too mad and upset to eat. Highland Park shootings and others. All Republicans have blood on their hands.

Lox and Bagels , with all the goodies. This is my favorite food and I could eat it for all my meals.
So happy belated 4th.

(13,421 posts)I saw a recipe a couple days ago that was salmon in the crockpot. It's a low, gentle heat, so I figured I'd give it a try. I laid down a bed of crushed pineapple in the bottom of the pot, mixed up the pineapple juice, soy sauce, monk fruit, some garlic and ginger. I put the lid on, set it on low and walked away. I have 15 minutes left of the 2 hour cook time. At that point I'll check it and see if it's a success. I have NO idea what to expect!
It's a surprise!!!

(13,421 posts)It was absolutely a good proof of concept! The salmon at 2 hours was still moist and had absorbed the spices. 10/10 I will use the cooking method again. The pineapple flavor was prominent, and so was the soy.
I do think that the tweaks I will make the next time will be to use pineapple chunks rather than crushed (a texture thing that's just my own preference) and I think I'll probably make a teriyaki sauce to go over the top of the salmon, then reserve part of it to serve (again, personal choice because I really like the look of the glossy sauce on what is otherwise a fairly monochromatic protein. I'll also add sliced green onions as a garnish. I didn't have any in the house this time and I think it would have been a plus.

(17,432 posts)Great Northern Beans and veggies with ham from the freezer. I had no ham stock so I used some Better Than Bullion Ham paste. It was OK, but not as good as my stock.
TJ drew holiday coverage tonight so I'm by myself.
