add seasonings to taste and a little olive oil. microwave for 6 minutes. Then fry.

Add a little water, cover and nuke 3 minutes. Drain off water and fry in hot bacon fat, oil or white shortening (Crisco). I’d love to add onions but DH prefers plain.

Kids gave us a deef fryer years ago..it is a small fryer with a basket..table top..we put outside..so we use canola oil (peanut oil is best, but expensive), enough in deep fryer according to instructions..small batches couple hand fulls at a time..our prep includes a brown paper bag with salt in it..let fries bubble in oil..you can see the doneness by the browning of the fries..

(if you prep potatoes ahead and put in water, be sure to dry off before put in hot oil or you will have a biggggg mess)

remove basket with fries..shake off some oil, dump in paper bag, shake..and enjoy..

but the oven is better. Then dice and cook with bacon grease and whatever spices you want.

If you want to add onions or peppers, wait until they have 5 minutes left to cook or the they might burn. add garlic in the last minute or two for the same reason.

Cut them in half, then slice into very thin half moons, and fry them in either bacon grease or a mix of oil and butter. Since I'm not pre-cooking the potatoes, I cover the pan with a lid in the beginning so they steam. This makes sure they all get done.

Then I uncover, sprinkle with Lawry's, garlic powder and black pepper, and turn up the heat until desired crispness.

Stirring/tossing occasionally thru the entire process.

Let em sit in fridge a few days to firm up. Peel and slice in rounds and cook in a small amt of EVO, well seasoned with S&P, a little onion powder. I use my cast iron skillet for this dish. For breakfast hash browns, grate the potatoes.

Here is low fat version, we call these "Pam potatoes".

Peel raw potatoes then slice in rounds. Spray Pam on large shallow baking dish, lay potatoes in dish, not a deep layer. Sprinkle with season-salt, pepper, onion powder. Cover dish with foil, bake at 350-375 till potatoes are soft, remove foil and let brown to your liking.

Here is another easy and low fat oven potato dish for Sweet potatoes.
Peel sweet potatoes and slice in 1/4" rounds. Lay 2 or 3 layers deep in shallow baking dish that has been sprayed well with Pam. Cover and bake in 350-375 oven until potatoes are soft. Remove from oven and sprinkle with mixture of brown sugar mixed with a small amount of cinnamon. Sick back in oven for about 4 or 5 mins, just to warm the brown sugar mixture. Adds "mouth" to dish if the sugar mixture is still a little grainy. This is a healthy version of candied yams; a big favorite in my family.

When we were first married some 63 years ago, we were "poor as church mice" as the old saying goes. The old boy was remembering eating "beanie-weinnie and home fries. We had this every week. I used cook a can of pork-n-beans mixed with 4 sliced hot dogs and a big skillet of home fried potatoes cooked in lard(because this was cheaper than shortening).. We'd eat it with a ripe sliced tomato.

I decided to surprise him and cooked up a meal of beanie-weinnie, old fashion home fries, sliced ripe tomatos and dill pickles. I made the home fries from raw potatoes, just as I did so long ago. It was a good meal and my ole boy enjoyed it, but happy we don't have to have it as a steady diet as we did so long ago.

I cube raw yellow potatoes and cook them in a wok in a neutral oil, giving them a toss every now and then. If I add onions—they are totally optional—I add them late in the game because they don’t take as much time as the potatoes. After everything is nicely browned, I turn the heat to low and cover for a few minutes just to be sure the potatoes are tender.
