I don't know if I'll finish it tomorrow -- I generally do it in the pressure cooker: several cycles of pressure-up-and-cool-down

for that reason. I'm baking fish, because it doesn't take too long and doesn't heat everything up.

I also have a salad with decent fixings and a rice. I'm thinking of making my lime salsa rice to go with the lime coating on the fish, but sometimes it's more fun to make tastes clash a bit. That's on the menu, though, and I'm pretty committed to it unless something goes completely awry.

so I made bean soup with leftover white beans, gumbo mix and mac and cheese. Oh, and a little spinach. Quite tasty so far.
My last successful run of meals was getting 9 meals out of red beans and rice and a Costco rotisserie chicken. Could have gotten more, but I stupidly forgot and left some rice and beans out on the counter overnight.
