What's for Dinner, Mon., Mar. 6, 2023

Tuscan Tortellini Salad. It has spinach leaves, green and white spinach tortellini, mozzarella (ciliegine), black olives, parmesan, salami, prosciutto bits, both cherry and sundried tomatoes. Balsamic dressing.

Ginger lemon kombucha.

We’re anchored in Hobe Sound next to Jupiter Island, FL. The homes lining the Intracoastal Waterway are extravagant mansions!

Chicken Parmesan with Rigatoni and a Caesar salad.

Cookies and tea for dessert.

but didn't- Cajun chicken sausage, peppers, onions, and mushrooms. Also made mashed potatoes to go with it. Dessert was chocolate chip cookies I baked this afternoon.

using up a leftover chop from last night. I made plenty, so these leftovers will make an appearance later in the week accompanying some Indian food. It isn't culturally consistent, but it'll be good, as well as frugal.
