What's for Dinner, Sun., June 4, 2023

I'm making a summer meal tonight, even though it's relatively cool today. 70 degrees.

Hamburger with all the trimmings: lettuce, tomato, red onion, mayo.
I hollow out the bun so it's just the crust.

Faux-tato salad, mayo based. This is a low-carb stand-in for potato salad made with cauliflower. There are both mayo-based and vinaigrette-based recipes on the 'net. I'm using the recipe at the link below.

A few sweet potato fries. Not worth heating up the oven, so I'll use the air fryer.

Diet cherry cola.

Watermelon for dessert, if I get that far and am still hungry.

Faux-tato salad recipe.

Peel ‘n’ eat. Bought fresh from the market on the dock.

Corn on the cob, hush puppies and cole slaw.

Klondike bars for dessert.

Tomorrow we leave Georgia and head north to the Palmetto State.

with mustard and diced red onion, baked beans, deviled egg potato salad from WinCo deli.

B. has a cheesecake I bought for him a couple days ago and I need to chop and sugar strawberries for him.

I think I’ll have one before bedtime. I also eat the pith. Did it when I was a kid still love scraping the pith off with my teeth. Some of us never grow up. I believe the pith is full of nutrients. 😋

5. Red beans and rice

It's stinkin' hot where I am, and it's a good all-day crock pot dish that won't overheat the kitchen. The rice won't take long to make at the end or be too bad for kitchen heat.

One repeat during the week, then can the rest of the red bean mix. It's really good to have some jars for 'working late' nights, especially if I already have some leftover rice from another dish. All i need to do is a quick mike of both, and slice up some green onion.

Generous tabasco on the side, of course.
