What's for Dinner, Mon., June 5, 2023

Turkey egg noodle soup with creamy Portobello mushroom base. Chopped leeks (garden), carrots, toppings of thyme and dill.

Baked cornbread in the cast iron skillet. It has red pepper flakes in it and I'm serving it with butter and honey.

Raspberry-lemon-ginger kombucha.

Dessert: peanut butter cookie and decaf coffee.

Spinach salad to start with red onion, cherry tomato halves, crumbled bacon topped with a drizzle of blue cheese dressing.

Grilled porterhouse steak with grilled onions and mushrooms. I’m also grilling corn on the cob in their husks.

Chocolate chip cookies for sweets.

Got some lovely brown and light green eggs from a friend and had forgotten how different and better farm eggs are than the grocery store ones. I mean, I knew they were, but didn’t remember the exact taste until biting into the sandwich. Yum. I miss having chickens.

That was a snack. Dinner is going to be grilled salmon, with rice and spinach with onions and mushrooms. Trying to decide what to put on the salmon. Not going to cook till about 9:00.

Edit: I’m too lazy to mess with the grill (it’s my day off) so defaulted to my usual baked salmon with a little ken’s honey mustard dressing on top. But, added some sriracha and a sprinkling of brown sugar, and put the onions and mushrooms in the pan, too. Garlic in the sautéed spinach. As usual. Gawd, I’m boring, lol!

It was delicious and is now my new and improved default day-off salmon. The onions and mushrooms we perfectly cooked in the salmon juices and bit of dressing in the pan. The brown sugar added just the right amount of sweetness.

with broccoli, carrots, peas, red pepper over rice noodles. I want to make a sauce, similar to General Tso's, but B. just wants soy sauce, so working out in my head how I can make the sauce on the side just for myself.

on my way home from the doctor's - they had morels for the cheapest I've seen in years so I got a handful. I'll saute those in some butter, and have it with some ravioli, steamed artichokes, and strawberry shortcake for dessert.
